Have a Blast at Hunt Mysteries + Save $2

Three weeks ago my friend and I went to see Midevil Days and Knights at Spaghetti Mama's.  It was a murder mystery dinner theater put on my Hunt Mysteries.  I have to say I have not had that much fun in a long time.  We laughed through the entire thing!  The cast was incredible, especially the guy in the green on the far right in the picture who asked what we'd like him to sing about.  My friend suggested cupcakes and he broke into an impromptu song all about a cupcake.  It was great!

If you like murder mystery dinner theaters, I highly recommend going to see one put on my Hunt Mystery!  If you can make it to their Godfather of the Bride on Saturday, use coupon code hmevent to save $2 off the regular priced tickets of $15.50.  It's also taking place at Spaghetti Mama's and the food was delicious, I'd go to another there any time!

Save 20% on Park Items at Disney Store

Are you planning a trip to Disneyland this summer?  One of the big expenses that seems to creep up on us every time we go is the souvenirs.  There are cute Disney toys around every corner it seems, and when you get off the rides you often have to walk through a store of ride themed toys!  If you go unprepared, you may really over spend!

I finally figured out the trick to it when we went a few months ago...buy your souvenirs ahead of time!  Find a sale, like the one going on now at The Disney Store right now (you'll save 20% on Disney parks authentic items when you use coupon code PARK20), and take them with you!  If you know you'll want your family to get Mickey Ears hats, buy them now and save!  If you know you'll want to dress up your little princess in an authentic dress, again, buy it now!

I still let you my kids each chose one souvenir at the park, but that's because I love to shop, but they know they only get to buy one thing and it really keeps the spending under control.

Dinner Tonight: Eggplant Stacks

First I should apologize.  This post was an after thought, so I didn't take a pretty picture of these eggplant stacks on our dinner plates, instead this is a picture of our left overs.  On a plate by itself it looks so pretty, I really wish I had a better picture.

Did you watch the show Cook Yourself Thin when it was on TV?  I loved it!  Do you have the cook books Cook Yourself Thin: Skinny Meals You Can Make in Minutes, Cook Yourself Thin Faster: Have Your Cake and Eat It Too with Over 75 New Recipes You Can Make in a Flash!, Cook Yourself Thin: The Delicious Way to Drop a Dress Size or Cook Yourself Thin Quick and Easy?  If not, let me introduce you with my all time favorite Cook Yourself Thin Recipe, you guessed it, Eggplant Stacks.

4 eggplants, thinly sliced into rounds (I used three and always say I need to just use 2.  I guess the ones I find at the store are bigger than they planned for.  It make a lot!)

4 tablespoons extra-virgin olive oil

4 tablespoons balsamic vinegar

1 lemon, juiced

1 1/4 cups store bought pesto

4-5 tomatoes, thinly sliced  (I always use about 6 or 7)

1 1/4 cups feta, crumbled

1/2 cup basil, chopped (I leave that out since the pesto kinda covers that for me)

salt and pepper

1. Lay the eggplant slices on a sheet pan, lightly sprinkle with salt and pepper (I skip the salt and pepper here since you'll do it again to the tomatoes)

2.  Mix together the olive oil, balsamic vinegar and lemon juice, and lightly brush the eggplant slices.  (I love balsamic vinegar, so I dunk the eggplant instead of lightly brushing them.)

3.  On a low broil, cook your eggplant about 6-10 minutes, turning occasionally.  Cook low and slow for sweetness.  Remove and reserve.

4.  Preheat oven to 350 degrees.

5.  On baking pan, arrange eggplant rounds side by side and spread each with a thin layer of pesto, then top with tomato rounds.  Season tomatoes with salt and pepper, and top each with about 1 tablespoon feta.  Continue to layer, ending with cheese.

6.  Bake in the oven until cheese begins to melt (3 or 4 minutes.)

Enjoy!

Head on over here to find the original recipe in prettier format with a better picture.

My family's take: my husband, usually a meat eater, loves these!  My kids eat them too, although I wouldn't say they have a new favorite food.

FlexFlops for Only $10!

BACK BY POPULAR DEMAND, McDONALD’S® REINTRODUCES THE ASIAN SALAD Available for a limited time, the colorful, balanced menu choice offers a delicious array of flavorful ingredients

OAK BROOK, Ill. (May 11, 2011) – Beginning this month through early September, McDonald’s customers across the country can enjoy a returning favorite – the Asian Salad. Joining McDonald’s existing line of Premium Salads, the refreshing summertime meal choice offers customers a unique flavor experience delivering some essential vitamins and minerals – all for less than 400 calories when served with grilled chicken.

“The return of the Asian Salad to our menu is an example of McDonald’s commitment to listening and responding to our customers’ needs, by providing well-balanced and great-tasting meal choices,” said Senior Director of Nutrition Cindy Goody, PhD, MBA, RD, LDN. “With about three cups of vegetables per salad, our Premium Salads are delicious and convenient choices that make it easier for our guests to incorporate this important food group into their day.”

McDonald’s Asian Salad is a mouth-watering blend of vegetables including premium greens, tender edamame and snow peas, red bell peppers, and sweet mandarin oranges, as well as sliced, toasted almonds. Served with a packet of Newman’s Own® Low-fat Sesame Ginger Dressing, it’s available with a warm orange-glazed grilled or crispy white meat chicken breast filet.

“From edamame to mandarin oranges, each ingredient in the Asian Salad comes together to create an outstanding combination of tastes, colors and textures,” says Chef Dan Coudreaut, Senior Director of Culinary Innovation, McDonald’s USA. “The inspired, unique ingredients of the salad are beautifully balanced with Sesame Ginger Dressing to give our guests a refreshing experience that is on trend with their evolving tastes.”

The Asian Salad with grilled chicken delivers about 360 calories when tossed in one packet of Newman’s Own® Low Fat Sesame Ginger Dressing and customers can choose to have their salad without chicken for only 240 calories.

Additionally, one serving of the Asian Salad delivers essential nutrients including:
21 percent of the Daily Value per serving for dietary fiber
70 percent of the Daily Value per serving for vitamin C
160 percent the Daily Value per serving for vitamin A

“The Asian Salad is another example of McDonald’s commitment to offering accessible and affordable vegetable choices, an important food group encouraged by the Dietary Guidelines for Americans, 2010,” said Elizabeth Pinvoka, PhD, RD, President of Produce for Better Health Foundation. “We recently commended McDonald’s as the first quick-service restaurant to receive our Role Model recognition for extraordinary support of the Fruits & Veggies–More Matters® national public health initiative to help consumers eat more of these important food groups.”

The quality ingredients in McDonald’s Premium Salads come from a select group of trusted, industry-leading suppliers. All of McDonald’s Premium Salads are made fresh daily.

Explore With Your Little Scientists This Summer

I've been posting a lot of fun activities to do with your kids this summer, but let's not forget to plan some great learning opportunities that will be a big hit too!

Buy.com has a great Venus Fly Trap on sale right now for only $19.99 shipped.  This would be a fun activity with your kids, and I'd love to have one in my house come September when all the flies are out too!  ;)

Amazon has the Insect Lore Live Butterfly Garden for only $14.87 that would be great to show your kids the life stages of butterflies.  My little girl will be getting this for her birthday this summer.  I'm sure we're all going to have so much fun with this!

Another one I think would be great to get is the Planet Frog Live Frog Habitat Kit, also from Amazon and only $21.26.

Teaching your kids about science can be as easy (and FREE!) as going for a nature walk.  We're starting this week with making leaf observation booklets.  We're finding different leaves in our yard and in the park, then taking them home and doing leaf rubbings and describing the leaves we've found.  We'll do this again later in the summer and compare things like color and size of the leaves.  Then we'll do it again in the fall when the leaves are falling off the trees.  This little project won't cost us anything more than the paper we use.

What science activities are you doing with your kids this summer?
